whole wheat panko breadcrumbs
1/4 cup
unsweetened plain almond milk
2/3 cup
grated parmesan cheese (about 2 ounces)

1 teaspoon
kosher salt (or to taste)
1 teaspoon
onion powder
1/2 teaspoon
garlic powder
1/2 teaspoon
Italian seasoning
1/4 teaspoon
black pepper
1 tsp
dried parsley
1 lb
- Preheat oven to 400°F.
- Mix together the first 10 ingredients in a bowl until well combined.
- Mix the ground chicken into the bowl making sure all of the ingredients are evenly mixed with the ground chicken.
- Form 10-12 meatballs with the mixture.
- Bake for 20-25 minutes or until the internal temperature of each meatball reaches at least 165°F.
- Add the cooked meatballs to a pot of simmering marinara, and serve over spaghetti squash, zucchini noodles or low carb pasta.
- Garnish with additional parmesan when serving.
