Grilled Chicken Caprese

Springer Mountain Farms Boneless Skinless Breasts
Salt & Pepper, for seasoning chicken
Vegetable oil, for grill to prevent sticking
1 ball
Fresh mozzarella, cut into 6 slices
1 container
Cherry tomatoes, quartered
2 tablespoons
Fresh basil, sliced or chopped
1/2 tablespoon
Olive oil
1/2 teaspoon
Salt
1/4 teaspoon
Pepper
Balsamic vinaigrette or Balsamic glaze
- Heat grill or grill pan to medium high.
- Season both sides of chicken breasts with salt and pepper.
- Wipe grill/grill pan with vegetable oil to prevent sticking.
- Place chicken on grill and cook for about 5-8 minutes per side, or until internal temperature reaches 165°F.
- Remove from grill, place slices of mozzarella on each piece of chicken, and keep warm for serving.
- In a small bowl, mix tomatoes, basil, olive oil, salt and pepper until combined.
- To serve, top each cheese covered piece of chicken with the tomato mixture and drizzle with balsamic vinaigrette or balsamic glaze.
