Feta Chicken & Pasta

fettuccine pasta
8 oz
feta cheese
1.5 lbs
1/4 cup
olive oil
1 pint
mushrooms, sliced
1 pint
cherry tomatoes
2-3
garlic cloves, minced
1 tablespoon
Italian seasoning
salt & black pepper, to taste
1/4 cup
fresh basil, torn into pieces
- Preheat oven to 350°F.
- Place chicken breast pieces in a large casserole dish.
- Nestle the block of feta cheese in the middle of the dish and chicken.
- Add olive oil, mushrooms, tomatoes, garlic, Italian seasoning, salt and pepper.
- Bake for 35-45 minutes or until the internal temperature of the chicken reaches at least 165°F.
- While chicken is cooking, cook the noodles according to package directions, drain and set aside.
- When chicken is cooked, shred the breast pieces with forks and toss with the feta and vegetables until everything is creamy and combined well.
- Toss in the noodles and add the fresh basil.
