"Creamy" Chicken Pasta

A healthier "creamy" chicken pasta dish thanks to the use of pureed cottage cheese and 99% fat free ground chicken breast. This delicious pot of healthiness is on the table in under 30 minutes.

Chicken Pasta

16 oz
pasta, uncooked
1 lb
14 oz
petite diced tomatoes (do NOT drain)
3 cups
chicken broth
2
garlic cloves, minced
1 tablespoon
Italian seasoning
5 oz
baby spinach
16 oz
cottage cheese
salt & black pepper, to taste
parmesan cheese for topping
  1. To a large pot, add chicken and cook over medium high heat until cooked through. You may need to add a few Tbsp of olive oil to the pot.
  2. Once chicken is cooked, add salt, pepper, Italian seasoning, pasta, tomatoes, spinach and stir.
  3. Cover and cook over medium low, stirring occasionally.
  4. While noodles cook, blend the cottage cheese until it is smooth and creamy.
  5. Once pasta is al dente (just about done), stir in the creamy cottage cheese.
  6. Taste to see if you need more salt or pepper.
  7. Serve with Parmesan cheese.
