"Creamy" Chicken Pasta

Chicken Pasta
16 oz
pasta, uncooked
1 lb
14 oz
petite diced tomatoes (do NOT drain)
3 cups
chicken broth
2
garlic cloves, minced
1 tablespoon
Italian seasoning
5 oz
baby spinach
16 oz
cottage cheese
salt & black pepper, to taste
parmesan cheese for topping
- To a large pot, add chicken and cook over medium high heat until cooked through. You may need to add a few Tbsp of olive oil to the pot.
- Once chicken is cooked, add salt, pepper, Italian seasoning, pasta, tomatoes, spinach and stir.
- Cover and cook over medium low, stirring occasionally.
- While noodles cook, blend the cottage cheese until it is smooth and creamy.
- Once pasta is al dente (just about done), stir in the creamy cottage cheese.
- Taste to see if you need more salt or pepper.
- Serve with Parmesan cheese.
