Chipotle Peach Vinaigrette
1 medium
peach, pit removed (does not have to be peeled)**

chipotle peppers in adobo
1 tablespoon
apple cider vinegar
1 tablespoon
honey
1/2 tablespoon
olive oil
- To make the vinaigrette, add peach, chipotle peppers, vinegar, and oil to a blender.
- Blend until smooth.
- Pour into a large bowl.
Chicken Salad
3 cups
1/4 cup
mayonnaise
1 medium
peach, pitted and diced (peeling is optional)
1/4 cup
chopped pecans, toasted
3 tablespoons
green onions, sliced
salt & pepper, to taste
4-6
croissants
sweet paprika, for garnish
leafy lettuce, optional
- Add the cooked and diced chicken to the bowl with the vinaigrette along with the mayonnaise, diced peach, chopped pecans and green onions.
- Adjust with salt and pepper as needed.
- Add more mayonnaise if a creamier consistency is desired.
- Assemble as sandwiches or eat with leafy greens.
*Recipe can be made using any cooked chicken and can be made with breasts as well.
**Easily made out of peach season by using frozen peaches.
