Chicken & Spinach Alfredo Pizza
Premade pizza dough already prepared pizza base or flatbread
Premade aflredo sauce
1.5 lbs
1 teaspoon
salt
1/2 teaspoon
ground black pepper
1/2 teaspoon
garlic powder
1/2
sweet onion, diced
2 cloves
garlic, minced
1 cup
fresh baby spinach leaves (add another cup if you love spinach)
3/4 cup
finely shredded mozzarella cheese
Fresh grated parmesan cheese, to taste
Crushed red pepper flakes, to taste (optional)
Olive oil, to brush on baked crust before serving
- Preheat oven to 400°F.
- If using a pizza stone to cook your pizza, place it in the oven before preheating so that it also gets to temp prior to placing the pizza on for baking. If you don't have a pizza stone, use a non stick or greased baking sheet for your pizza.
- Season chicken with salt, pepper and garlic powder to taste.
- While oven is preheating, sauté chicken over medium high heat in a nonstick skillet until it begins to brown (about 5-7 minutes); remove from pan and set aside.
- Spray pan with non-stick cooking spray and add onions, sauteing them until translucent, stirring occasionally (about 5 minutes).
- Prebake your pizza crust by placing on pizza stone or baking sheet and pricking the crust with a fork to help prevent air pockets from forming while baking.*
- Add garlic to onions, stirring for another minute.
- Turn heat down to medium and place chicken back in pan and stir in spinach; cover with a lid to wilt the spinach leaves.
- Stir occasionally until spinach leaves are wilted; remove from heat.
- Spread your desired amount of alfredo sauce over the prebaked pizza crust leaving about 1/2 inch from all sides.
- Top the alfredo sauce with most of the mozzarella cheese, then add the chicken/spinach mixture evenly over cheese.
- Sprinkle a little more mozzarella cheese over the chicken, then add parmesan and crushed red pepper flakes if desired.
- Place pizza in the oven and bake until crust browns and cheese is melted (about 8-10 minutes depending on your thickness of crust).
- Remove from oven and brush edges of crust with olive oil, if desired.
- Cut and serve!
