Here's the perfect gluten free alternative to a traditional chicken alfredo that is full of creamy parmesan cheese pasta and mixed with perfectly seasoned, pan seared chicken breasts.

Chicken Seasoning

1 1/2 teaspoon
sweet smoked paprika
1 1/2 teaspoon
oregano
1 teaspoon
garlic powder
1/2 teaspoon
thyme
1/2 teaspoon
black pepper
1/2 teaspoon
salt
  1. Place all chicken seasoning ingredients in a small bowl and mix together until evenly distributed.

Chicken Parmesan Pasta

12 oz
gluten free pasta (farfalle or any other shape)
1 1/2 lbs
2 tablespoons
olive oil
4 tablespoons
butter
2 teaspoons
dried shallots
2 teaspoons
Italian seasoning
2 tablespoons
gluten free flour
1/2 cup
chicken broth or stock
3 cups
heavy cream
12 oz
parmesan cheese, shredded
1/4 cup
reserved pasta water
1/2 teaspoon
salt
  1. In a large pot, boil pasta according to directions for an al dente pasta. Strain , reserving 1/4 cup of the pasta water. Set pasta aside until ready to add to the chicken dish.
  2. Pound chicken until it is thinned out slightly for more even cooking and season on both sides with the chicken seasoning mix.
  3. Heat the olive oil over medium heat in a large skillet.
  4. Sear the chicken for about 5 minutes on each side once the pan is hot.
  5. Once seared, lower heat to medium-low, cover with a lid and cook for an additional 10-12 minutes, or until the internal temperature of the chicken reaches 165°F.
  6. Once the chicken is cooked, move it to a cutting board to rest while making the cream sauce.
  7. Place the butter in the pan that the chicken was cooked in and allow the butter to melt.
  8. Mix in the shallots and Italian seasoning, stir well and simmer for about 1 minute.
  9. Add the flour and mix well, scraping the bottom of the pan.
  10. Pour in the chicken broth and heavy cream and whisk until a smooth a creamy sauce has formed.
  11. Stir in the parmesan cheese and mix until fully melted. Continue cooking until it reaches your desired consistency, stirring occasionally.
  12. Toss in the cooked pasta until it's evenly coated. Add pasta water 1 tablespoon at a time to thin the sauce out, if needed.
  13. Slice the chicken breasts and add the pieces to the pasta, stirring it all together carefully.
