Chicken & Broccoli Mac and Cheese

Salt and pepper, to taste
1 1/2 teaspoons
Oil
2 tablespoons
Unsalted butter
2 tablespoons
All-purpose flour
1 cup
White onions, diced
2 cups
Whipping cream
1 cup
Gouda cheese, grated
1 1/2 cups
Sharp cheddar cheese, grated
1 cup
Provolone cheese, shredded
2 cups
Pasta shells, freshly cooked
1 small head
Broccoli, cut into florets and steamed
Chopped chives for garnish
- Place Lodge Cast Iron Dutch oven over medium heat.
- Season chicken with salt and pepper.
- Add oil and cook chicken until internal temperature of largest piece of chicken reaches 165°F.
- Remove chicken onto clean plate.
- Melt butter.
- Stir in flour until butter and flour are well integrated.
- Reduce temperature to low medium heat, add onions and cook 1 - 2 minutes until translucent.
- Slowly stir in cream and mix well until well incorporated.
- Bring cream mixture to a simmer and slowly add cheese.
- Season with salt and pepper.
- Add chicken, broccoli, cooked pasta shells. Mix well.
- Garnish with chopped chives, serve and enjoy!
