Brining is an easy way to season your meat from the inside out and ensure it remains hydrated. The meat science behind brining is hotly debated, but its utility is not; it will prevent cooking a bland, dry chicken, and instead ensure it is tender and juicy. Despite its efficacy, you must still make sure to not overcook your meat. Always aim for an internal temperature of 165°F for leaner chicken & 185°F for fall-off-the-bone, dark meat chicken.

Alabama BBQ Style Fried Wings

1 cup
Prepared mayonnaise
1/2 teaspoon
Cayenne pepper
1 teaspoon
Paprika
2 tablespoons
Granulated garlic
1 teaspoon
Onion powder
1/2 cup
Apple cider vinegar
2 lbs
Springer Mountain Farms Wing Portions, Party Wings or Drumettes
2 quarts
Canola oil
  1. To make the Alabama white BBQ sauce, mix mayonnaise, cayenne pepper, paprika, granulated garlic, onion powder and vinegar in a large bowl.
  2. Add canola oil to a high-walled medium to large sized pot, and heat over high heat until it reaches 375-400°F.
  3. Pat all wing portions with paper towels to dry them, and then carefully add the wings to the hot oil.
  4. Cook in batches if necessary, being careful not to overcrowd the pot.
  5. Fry the wing portions for 4-6 minutes or until the internal temperature reaches at least 165°F.
  6. Once cooked, remove from oil to a paper towel lined plate for draining.
  7. Add hot, cooked wings to the BBQ sauce and toss to coat.
