In line with this holistic approach, Dr. Robin Ganzert, CEO of American Humane—the country’s first national humane organization—has compiled mouthwatering recipes featuring ingredients that are ethically produced by farmers, ranchers and other American Humane Certified™ organizations to create The Humane Table: Cooking With Compassion.

The recipes are constructed around the season, so that whether a home chef is simmering a stew on a cold night or grilling out under balmy skies, those who cook are able to set a humane table year-round. Compassion and dignity are the ingredients for The Humane Table—a table where American Humane’s shared values of treating animals with respect are truly celebrated. The Humane Table is for home chefs and readers who share these principles.

American Humane’s farm program started as an effort to improve the lives of livestock in railroad transit in 1877, so it’s been more than a century of growth and development that has now blossomed into the nation’s first third-party farm animal welfare program. The demand for products that are humanely raised and ethically treated has skyrocketed in recent years, which sparked the impetus for American Humane to take the reins and lead in the area of farm animal welfare and bringing humanity to all areas of our life—including the dining room table.

American Humane conducted a survey in September that showed that 67 percent of people are concerned about the welfare of animals on farms today. 70 percent of those surveyed said they are likely to choose an American Humane Certified product over one that is not. A cookbook was a natural way to show the world how simple and delicious it is to make a humane choice when you’re shopping for groceries or making dinner for your family.

The American Humane Certified™ seal is the world’s first independent, third-party certification program to verify the humane treatment of farm animals. American Humane created a set of more than 200 rigorous, science-based standards used to award farms and ranches with the American Humane Certified™ seal. American Humane performs detailed audits of these farms who seek to acquire and maintain the American Humane Certified™ seal to determine if they qualify. The standards used were crafted by a Scientific Advisory Committee made up of some of the leading scientists in the animal welfare fields today. The guidelines cover everything, from adequate space to air and water quality, heating, lighting, shade, and the animals’ ability to engage in what we call “natural behaviors.” Everything done is geared toward helping promote animal welfare on farms and ranches. The American Humane Certified™ program helps protect more than 1 billion animals around the globe. This number includes chickens, pigs, ducks, turkeys and more. American Humane Certified™ is truly one of American Humane’s most pivotal programs.

The cookbook features a Q&A with Springer Mountain Farms’ President, Gus Arrendale, along with three delectable dishes starring Springer Mountain Farms chicken: Chicken Avocado Burger, Chimichurri Chicken Tenders and Southern Fried Chicken with Thai Chili Cilantro Glaze.
