There is something magical about the combination of flour, butter, leavening, and milk that combine to make flakey, golden, fluffy biscuits. Sometimes, though, they spread across a sheet pan while baking. Sometimes they don’t get a rise and remain flat as hockey pucks. Why do their bottoms sometime burn? What’s the trick for making them fluffy? Which type of flour is best? Even with such a simple recipe, there is necessary understanding of ingredients and the baking process to achieve the perfect biscuit.
Well, roll up your sleeves! Experts are headed to Atlanta to teach the secrets to baking the perfect biscuits every time. On Saturday, Feb. 23, Williams-Sonoma at Ponce City Market hosts kitchen coaches Chadwick Boyd and Carla Hall direct from New York City.
Chadwick Boyd is a recipe developer and brand consultant, often seen in the movies as the host of “Reel Food.” He also organizes The International Biscuit Festival held annually in Knoxville, TN.
Carla Hall is a TV personality known as a fan favorite on Bravo’s Top Chef, former co-host of ABC’s The Chew, and cookbook author. Biscuits and fried chicken were signatures at her recently closed restaurant, Carla Hall’s Southern Kitchen.
The dynamic duo will walk us through perfect biscuit construction and baking. Learn and sample Hall’s flakey buttermilk biscuits and Boyd’s savory carrot sage beauties.
The class is free for lessons and samples. A VIP ticket ($32.75) includes a signed copy of Hall’s new book, Carla Hall’s Soul Food. Hall will expand upon the making of her book and how she went back to her Nashville roots through the writing process. She will discuss American comfort food and the history of soul food from Africa and the Caribbean to the American South.
Boyd contributed his recipe for celery-Gruyere drop biscuits in the latest issue of Rachel Ray Magazine and he shared it with us. “These go fab with roasted chicken,” he says.
